Does GraphIn replace Maltego, a SIEM, or a notebook?

No. GraphIn is the graph-first desk on OSINTverse sources. It does not replace a SIEM, TIP, link-analysis suite, or analyst notebook.

What actually gets saved?

Transforms you attach to the graph, plus flags, notes, aliases, and layout on the canvas. Deleting a graph removes the grouping only — charges and activity stay on your ledger.
